Gouda Pork Burgers

Ingredients:
2 yellow onion
1 lime
2 cloves garlic
4 potato buns
2 tsp smoked paprika
2 tsp sriracha
20 oz ground pork
4-6 slices gouda cheese
4 tbsp mayonnaise
4 tbsp sour cream
Instructions:
Half, peel and thinly slice onion. Mince a few slices until you have about 4 tbsp. Mince (or grate) 1 clove of garlic
Melt 2 tbsp butter (for one onion, 4 tbsp for two onions) in a medium pan over medium heat. Add sliced onion, 1/2 tsp sugar, and salt. Cook the onions, stirring occasionally for 10-15 minutes. (If onions begin to burn add some water). Stir in squeeze of lime juice and Sriracha to taste.
While onions cook, in a large bowl combine pork, minced onion, 1 clove of garlic, 1 tsp paprika, 1 tsp sugar and salt. Create patties.
Heat drizzle of olive oil in heated pan and place patties in skillet. 4-7 minutes per side or until patties are cooked through. (I just check the internal temp and make sure it reaches 160 degrees) For the last 1-2 minutes place gouda cheese on top and allow it to melt.
Sauce: 4 tbsp mayonnaise, 4 tbsp sour cream, squeeze of lime juice, 1 tsp grated garlic (I just garlic powder), season with salt and pepper.
Side options: broccoli, roasted potatoes
