Beef Enchiladas

Beef Enchiladas 


Fresh or Frozen 

Makes 2 9x13 pans 


Ingredients:

2 1/2 lbs Ground Beef

2 cans (15 oz each) Enchilada Sauce 

1 can Cream of Chicken Soup

1 can Tomato Soup

10 Flour Tortillas 

2 1/2 cups Cheddar Cheese 


Instructions:

Cook, drain Beef. 

Combine Enchilada sauce, Cream of Chicken Soup, Tomato Soup. 

Pour 1 cup of soup/sauce mixture onto the bottom of each 9x13. Set aside the remainder. 

Spoon the beef/sauce mixture into each tortilla, add a little cheese, roll tortilla and put seam down. 

Top the tortillas with the remainder of the mixture.

Cover with foil. 

Bake at 350 degrees for 25-30 minutes. 

Uncover and add cheese. Bake for another 5-10 minutes. 

Optional add-ons: Sour Cream, Peppers, Mexican Rice, Tortilla Chips
